Apollonia Poilâne, head of the legendary Paris bakery Poilâne, in the first Poilâne bakery founded by her grandfather Pierre Poilâne at 8 rue du Cherche-Midi in the Saint Germaine des Prés district. Apollonia took over the family business from her father Lionel in 2002.
